Soaked & Dried Walnuts

Why soak walnuts? Soaking walnuts helps mellow their natural bitterness, resulting in a smoother, milder flavor. Drying them afterward restores their crisp texture, making them perfect for snacking or adding to recipes. Our recipe includes instructions for drying them in the oven, but you can also use a dehydrator (times and temperatures will vary depending on your dehydrator).

Prep Time: Overnight
Cook Time: 12-16 hours
Ingredients
1 pound walnuts
1 quart water
2 heaping teaspoons sea salt
Directions
Dissolve the sea salt in water and pour over the walnuts (enough water to completely cover the walnuts; about a quart). Leave to soak overnight.
Drain walnuts well (don’t rinse).
Line a baking tray with parchment paper and spread nuts evenly over it.
Dry in the oven at 175 F for a minimum of 12 hours, and preferably 14-16 hours.
If they’re not crispy enough once cool, dry in the oven for longer (this can be done at any time to rejuvenate them).
Store in the fridge.
